Research Fields

Main research   interesting on the two area, Health fermented food and enzyme technology,

Health   fermented food including:

1.    Various fruit   wine, rice wine, soy sauce and vinegar, the spirit of   Low degree of drunkenness, fermented beveragefermented tea, discover function microbial and promotion   functional components.

2.    microorganism and enzyme are used for high value conversion of  plant/vegetables   and fruits /cereal/Chinese herbal medicine; such as excision or connection of   glycosides, Saponins transformationthe promotion of three terpenoids compounds, Water-soluble   transformation of ester soluble components by  fermentation, Getting   better functional ingredients and improving the bioavailability of functional   components.

3.    Selection of probiotics, identification of functional and food   use.

4.    The production of food functional factors by microbial fermentation.

5.    The development of  fermented food therapy products for the   treatment and prevention of various disease antitumor, antihypertensive, hypolipidemic,   hypoglycemic, Prevention of gou etc..
